Chicken and Roasted-Strawberry Picnic Sandwich

Spring is such an excellent time for picnics! This tasty picnic sandwich has tender chicken breasts combined with a balsamic-roasted strawberry spread that is pink and pretty and just right for springtime! It’s a super simple sandwich recipe, that will have you out of the kitchen and picnicking in no time.

Chicken and strawberries are the two main ingredients for this sandwich. I love anything strawberry in the springtime! And the unexpected delight of strawberries on a sandwich is an enjoyment not to be missed. Simply cook the chicken (poached, grilled…however you prefer.) Then prep the strawberries for roasting by washing, removing the tops, and slicing in half.

Roasting the strawberries is so simple! Arrange them in a single layer on a parchment-lined baking sheet and drizzle with maple syrup and balsamic vinegar…add a pinch of salt. Then roast in a 350 oven for 25-30 minutes, flipping them over once while cooking. Cool slightly, then mash with a potato masher. Cool completely.

When completely cool, mix with a tub of whipped cream cheese and chives until softly pink and thoroughly mixed. Spread on ciabatta rolls and top with sliced chicken and lettuce. You could even add strawberry slices to your sandwich. The roasted strawberries give the cream cheese spread a sweet-smoky taste that pairs wonderfully with the chicken. Happy picnicking!
